    Instructions

    1. 1

In a large pot or Dutch oven, heat 2 tablespoons of cooking oil over medium heat, then sauté 1 large sliced red onion and 10 cloves of minced garlic until fragrant, about 3 minutes.

    2. 2

Add 1.5 kilograms of pork belly cubes to the pot and brown on all sides for about 8-10 minutes until slightly golden.

    3. 3

Pour in 0.75 cup of white vinegar and 0.5 cup of soy sauce, then bring the mixture to a simmer without stirring for 3-5 minutes.

    4. 4

Stir in 0.33 cup of miso paste until well combined, then add 1 can of coconut milk, 0.5 cup of water, 3 bay leaves, and 1 teaspoon of black peppercorns.

    5. 5

Bring the mixture to a gentle boil, then reduce the heat to low, cover the pot, and simmer for 1 hour and 30 minutes, or until the pork is tender.

    6. 6

Remove the lid and continue to simmer for another 20-30 minutes, or until the sauce has thickened to your desired consistency.

    7. 7

Stir in 1 tablespoon of brown sugar if desired, along with 2 sliced green chilies, and cook for 2 more minutes.
