    Instructions

      Drain and rinse 2 cans of young green jackfruit thoroughly, then gently shred or cut it into steak-like pieces and press out excess water using a clean kitchen towel.

      Combine 2 tablespoons of freshly squeezed lemon juice, 1 tablespoon of lemon zest, 3 cloves of minced garlic, 3 finely chopped peri-peri chillies (adjust to taste), 4 tablespoons of olive oil, 2 tablespoons of white wine vinegar, 1 teaspoon of smoked paprika, 0.5 teaspoon of ground cumin, 1 tablespoon of brown sugar, 1 teaspoon of salt, and 0.5 teaspoon of freshly ground black pepper in a large bowl to create the peri-peri marinade.

      Add the prepared jackfruit pieces to the marinade, ensuring each piece is well coated, then cover the bowl and refrigerate for a minimum of 30 minutes, or preferably for 1 to 2 hours, to allow the flavors to penetrate.

      Preheat a grill or grill pan to a medium-high heat, brushing the grates lightly with 1 teaspoon of olive oil to prevent sticking.

      Place the marinated jackfruit pieces directly onto the hot grill, discarding any remaining marinade, and grill for 6-8 minutes per side, turning occasionally, until golden brown, slightly charred, and tender.
