    Instructions

      Press 1 block of extra-firm tofu for at least 30 minutes to remove excess water, then cut it into 1-inch thick slices.

      In a shallow dish, sprinkle 2 tablespoons of Cajun seasoning, 1 teaspoon of salt, and 0.5 teaspoon of black pepper evenly over all sides of the tofu slices.

      Heat 2 tablespoons of olive oil in a large cast-iron skillet over medium-high heat until shimmering, then carefully add the seasoned tofu and sear for 4-5 minutes per side until golden brown and crispy, setting it aside on a plate.

      Reduce the heat to medium and add 1 tablespoon of olive oil to the same skillet, then sauté 1 medium diced yellow onion, 1 medium diced green bell pepper, and 1 medium diced celery stalk for 5-7 minutes until softened.

      Stir in 3 minced garlic cloves and 0.5 teaspoon of cayenne pepper, cooking for 1 minute until fragrant.

      Add 1 pound of roughly chopped mustard greens and 1 cup of vegetable broth to the skillet, bring to a simmer, then cover and cook for 10-15 minutes until the greens are tender.
