    Instructions

    1. 1

Prepare the black garlic sauce by mashing 6 cloves of black garlic with 2 tablespoons of aji amarillo paste, 3 tablespoons of fresh lime juice, and 0.5 teaspoon of salt until smooth.

    2. 2

In a separate bowl, toss 1 pound of peeled and deveined shrimp with 0.5 teaspoon of salt and 0.25 teaspoon of black pepper until evenly coated.

    3. 3

Lightly dredge the seasoned shrimp in 0.5 cup of all-purpose flour, shaking off any excess.

    4. 4

Heat 0.5 cup of annatto oil in a large pan over high heat until shimmering, then flash-fry the floured shrimp for 1 to 2 minutes per side until pink and cooked through; remove and set aside.

    5. 5

In the same pan, reduce heat to medium and pan-fry 2 large sweet plantains, sliced diagonally into 1-inch thick pieces, until golden brown and tender, about 3 to 4 minutes per side.

    6. 6

Serve the flash-fried shrimp and sweet plantains immediately, drizzled generously with the prepared black garlic and aji amarillo sauce, and garnished with 0.25 cup of chopped fresh cilantro and 0.25 cup of finely diced red onion.
