Bring the poaching liquid to a gentle simmer over medium heat, allowing the flavors to meld for 5 minutes.

Carefully place 2 haddock fillets, approximately 170 grams each, into the simmering liquid, ensuring they are fully submerged.

Reduce the heat to low and gently poach the haddock for 8-12 minutes, or until the fish is opaque and flakes easily with a fork.
