    Instructions

      In a large saucepan, combine 4 cups of water or fish stock, 0.5 thinly sliced lemon, 2 smashed cloves of garlic, 1 tablespoon of olive oil, 0.5 teaspoon of dried oregano, 0.25 teaspoon of dried thyme, 0.25 teaspoon of chipotle powder, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper.

      Bring the poaching liquid to a gentle simmer over medium heat, allowing the flavors to meld for 5 minutes.

      Carefully place 2 haddock fillets, approximately 170 grams each, into the simmering liquid, ensuring they are fully submerged.

      Reduce the heat to low and gently poach the haddock for 8-12 minutes, or until the fish is opaque and flakes easily with a fork.

      Using a slotted spoon or spatula, carefully remove the poached haddock fillets from the liquid and place them onto individual serving plates.

      Drizzle each fillet with 1 tablespoon of the flavorful poaching liquid and garnish with 1 tablespoon of fresh chopped parsley.
