Chipotle Lime Shrimp Tacos with Mango Salsa

In a medium bowl, combine 1 pound of peeled and deveined shrimp with 2 tablespoons of minced chipotle peppers in adobo sauce, 2 minced garlic cloves, 1 teaspoon of cumin, 1 teaspoon of paprika, 2 tablespoons of lime juice, and 1 tablespoon of olive oil, then marinate for 15 minutes.

Prepare the mango salsa by combining 1 large diced mango, 1/4 cup of finely diced red onion, 1/2 deseeded and minced jalapeño, 2 tablespoons of chopped cilantro, and 1 tablespoon of lime juice in a separate bowl.

Heat a large skillet over medium-high heat and cook the marinated shrimp for 2 to 3 minutes per side, until pink and cooked through.

Warm 12 small corn tortillas on a dry skillet or microwave for about 15 to 20 seconds each until pliable.

Assemble the tacos by placing a portion of the cooked chipotle lime shrimp into each warm tortilla.
