      Prepare the coating stations by mixing 100 grams of all-purpose flour on a shallow plate, and in another bowl, combine 100 grams of fine Scottish rolled oats, 1 teaspoon of ground black pepper, 0.5 teaspoon of salt, 1 teaspoon of ground coriander, and 0.5 teaspoon of ground allspice.

      In a third bowl, whisk together 150 milliliters of plant-based milk, 1 tablespoon of Dijon mustard, and 2 tablespoons of nutritional yeast to create the wet batter.

      Dredge each seitan slice first in the 100 grams of all-purpose flour, ensuring it is fully coated, then dip it into the plant-based milk batter, allowing any excess to drip off.
