    Instructions

    1. 1

In a large pot, combine 4 cups (946 ml) of water or chicken broth, one 2-inch (5 cm) piece of fresh galangal cut into thin slices, two halved cloves of garlic, one halved whole lemon, two bay leaves, one 2-inch cinnamon stick, and 10 whole black peppercorns, then bring the mixture to a gentle simmer over medium heat.

    2. 2

Carefully add two boneless, skinless chicken breasts, totaling approximately 300 grams, into the simmering poaching liquid, ensuring they are fully submerged, then reduce heat to low, cover the pot, and gently poach for 15-20 minutes until the chicken is thoroughly cooked through. Remove the chicken from the liquid and allow it to cool completely before shredding it into bite-sized pieces.

    3. 3

Rinse 1 cup (180 grams) of freekeh under cold water, then in a separate saucepan, cook the freekeh according to package directions, typically by combining it with 2.5 cups (591 ml) of water or broth and simmering for 15-20 minutes until the grains are tender and have absorbed the liquid.

    4. 4

While the freekeh cools, prepare the fresh ingredients by finely chopping 1/2 cup (15 grams) of fresh parsley, 1/4 cup (7 grams) of fresh mint, and 1/4 cup (7 grams) of fresh cilantro, then halve 1 cup (150 grams) of cherry tomatoes, dice 1/2 English cucumber (approximately 100 grams), and thinly slice 1/4 red onion (approximately 30 grams).

    5. 5

For the dressing, whisk together 3 tablespoons (45 ml) of extra virgin olive oil, 1 tablespoon (15 ml) of pomegranate molasses, 1 tablespoon (15 ml) of fresh lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until thoroughly combined.

    6. 6

In a large serving bowl, combine the cooled shredded chicken, cooked freekeh, chopped parsley, mint, cilantro, halved cherry tomatoes, diced cucumber, and sliced red onion, then pour the prepared dressing over the mixture and gently toss everything until all ingredients are evenly coated. Serve immediately or chill for a refreshing salad.
