    Instructions

      In a large pot or Dutch oven, heat 3 tablespoons of niter kibbeh or vegetable oil over medium heat.

      Add 1 large diced red onion and sauté for 8-10 minutes until softened and translucent.

      Stir in 4 minced garlic cloves and 1 inch of grated fresh ginger, cooking for 2 minutes until fragrant.

      Add 3 tablespoons of berbere spice blend and 2 tablespoons of tomato paste, cooking for 3 minutes while stirring constantly.

      Gradually whisk in 6 cups of vegetable broth or water until smooth, then slowly add 2 cups of shiro powder, whisking continuously to prevent lumps.

      Bring the stew to a gentle simmer, then reduce heat to low, cover, and cook for 30-40 minutes, stirring occasionally, until thickened.

      Season the shiro wot with 1 teaspoon of salt to taste, and serve hot, optionally garnished with 1 small sliced jalapeño.
