Instructions
- 1
Drain 1 block (400 grams) of extra-firm tofu, press out excess water, and then cut it into 1-inch cubes.
- 2
In a large bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of fresh lime juice, 3 tablespoons of jerk seasoning, 1 tablespoon of chopped fresh thyme leaves, 1 teaspoon of packed brown sugar, 0.5 teaspoon of salt, 0.25 teaspoon of freshly ground black pepper, and 0.5 minced Scotch bonnet pepper if desired.
- 3
Add the cubed tofu, 2 peeled and cubed medium sweet potatoes, 1 chopped medium red bell pepper, 1 chopped medium yellow bell pepper, and 1 roughly chopped small red onion to the bowl with the marinade, tossing gently to ensure everything is evenly coated.
- 4
Allow the ingredients to marinate at room temperature for at least 30 minutes, or refrigerate for up to 2 hours, stirring occasionally.
- 5
Preheat a grill to high heat or preheat an oven to 4500F (2300C) with the broiler on high, ensuring the cooking surface is very hot for charring.
- 6
Thread the marinated tofu cubes and vegetables onto skewers or spread them in a single layer on a foil-lined baking sheet.
- 7
Fire-roast the skewers or baking sheet ingredients for 15-20 minutes, turning every 5 minutes, until the vegetables are tender-crisp and the tofu has developed a flavorful char.
- 8
Carefully remove the Fire-Roasted Jerk Tofu & Sweet Potato Medley from the heat and serve immediately.
