    Instructions

      Cut 500 grams of firm seitan into 1-inch cubes and set aside.

      In a large bowl, whisk together 4 tablespoons of olive oil, 3 tablespoons of freshly squeezed lemon juice, 4 minced garlic cloves, 2 teaspoons of dried oregano, 1 teaspoon of salt, and 0.5 teaspoon of freshly ground black pepper.

      Add the seitan cubes, 1 large red onion cut into 1-inch pieces, and 1 large green bell pepper cut into 1-inch pieces to the marinade, tossing to ensure all ingredients are well coated, then marinate for at least 30 minutes.

      While marinating, prepare the Plant-Based Tzatziki by combining 1 cup of unsweetened plant-based yogurt, 0.5 large grated and squeezed dry cucumber, 2 tablespoons of chopped fresh dill, 1 minced garlic clove, 1 tablespoon of lemon juice, and 0.25 teaspoon of salt in a small bowl.

      Preheat a grill or prepare a fire pit for medium-high heat roasting.

      Thread the marinated seitan, red onion, and bell pepper pieces alternately onto skewers.
