    Instructions

      Press 450 grams of extra-firm tofu for 30 minutes to remove excess water, then cut it into 2.5 cm cubes.

      Prepare the marinade by whisking together 60 ml fresh lemon juice, 60 ml olive oil, 2 teaspoons dried oregano, 2 minced cloves of fresh garlic, 1 teaspoon salt, and 0.5 teaspoon black pepper in a large bowl.

      Add the cubed tofu, 1 thinly sliced red onion, and 2 chopped bell peppers to the marinade, ensuring all ingredients are well coated, then marinate for at least 30 minutes, or up to 2 hours, in the refrigerator.

      Thread the marinated tofu cubes, red onion slices, bell pepper pieces, and 1 cup of whole cherry tomatoes onto 6 wooden skewers, alternating ingredients for an even cook.

      Preheat a fire grill or broiler to medium-high heat.

      Place the skewers directly onto the hot grill and fire-roast for 15-20 minutes, turning occasionally, until the tofu is golden brown and the vegetables are tender-crisp with charred edges.

      Remove the Fire-Roasted Tofu Souvlaki from the grill and let it rest for 5 minutes before serving with a side of tzatziki or fresh pita bread.
