      Slice 400 grams of tempeh into 1 cm thick rectangles, dice 1 large red bell pepper, 1 large green bell pepper, and 1 large onion into similar-sized pieces, and mince 4 cloves of garlic.

      In a large bowl, whisk together 4 tablespoons of olive oil, 2 tablespoons of tomato paste, 1 teaspoon of ground cumin, 1 teaspoon of sweet paprika, 1 teaspoon of dried oregano, 1/2 teaspoon of sumac, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to create the marinade.

      Add the sliced tempeh, diced bell peppers, diced onion, minced garlic, and 250 grams of cherry tomatoes to the bowl with the marinade, tossing everything thoroughly until all ingredients are evenly coated.

      Spread the marinated tempeh and vegetables in a single layer onto the prepared baking sheet, ensuring not to overcrowd the pan for more even roasting.

      Roast in the preheated oven for 30-35 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized, and the tempeh is golden brown.
