    Instructions

      Heat 1 tablespoon cooking oil in a large pot or Dutch oven over medium heat.

      Add 500 grams pork belly cubes and sear until lightly browned on all sides, then remove the pork and set aside.

      In the same pot, sauté 1 large chopped onion for 3 minutes until softened, then add 6 minced cloves garlic and 1 piece (2-inch) julienned ginger and cook for another 2 minutes until fragrant.

      Return the seared pork belly to the pot, then add 4 tablespoons soy sauce, 3 tablespoons cane vinegar, 1 tablespoon brown sugar, 2 bay leaves, 1/2 teaspoon whole black peppercorns, and 1 cup water or pork broth.

      Bring the mixture to a boil, then reduce heat to low, cover the pot, and simmer for 45 minutes, stirring occasionally.

      Pour in 800 ml full-fat coconut milk and add 2 large sliced ripe saba plantains, then gently stir to combine.

      Continue to simmer uncovered for 20-30 minutes, or until the pork is very tender, the plantains are cooked through, and the sauce has thickened to your desired consistency.
