    Instructions

    1. 1

In a large mixing bowl, thoroughly combine 1.5 pounds of ground lamb, 0.5 cup of finely grated yellow onion, 3 minced garlic cloves, 0.25 cup of finely chopped fresh parsley, 2 tablespoons of finely chopped fresh mint, 1.5 teaspoons of chipotle powder, 1 teaspoon of ground cumin, 0.75 teaspoon of ground coriander, 0.5 teaspoon of smoked paprika, 1 teaspoon of salt, and 0.5 teaspoon of freshly ground black pepper.

    2. 2

Divide the kofta mixture into 8 to 10 equal portions and gently shape each portion into an oblong patty or around a metal skewer.

    3. 3

Preheat a grill to medium-high heat, then lightly brush the kofta with 1 tablespoon of olive oil just before grilling.

    4. 4

Place the shaped kofta on the hot grill and cook for 3-4 minutes per side, turning occasionally, until they are beautifully charred and cooked through.

    5. 5

While the kofta are grilling, prepare the sumac yogurt sauce by whisking together 1 cup of plain Greek yogurt, 1.5 teaspoons of sumac, and 1 tablespoon of fresh lemon juice in a small bowl until smooth.

    6. 6

Remove the grilled kofta from the heat and allow them to rest for 2 minutes before serving them immediately with the prepared sumac yogurt, garnished with 0.5 small diced cucumber and 0.25 small thinly sliced red onion.
