    Instructions

    1. 1

Prepare the smoky chipotle-harissa glaze by combining 1 tablespoon harissa paste, 1 minced chipotle pepper in adobo, 2 tablespoons lemon juice, 2 minced garlic cloves, 1 tablespoon honey, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a small bowl; mix thoroughly.

    2. 2

Cut 250 grams of halloumi cheese into 1-inch cubes and chop 1 large red bell pepper, 1 large green bell pepper, and 1 medium red onion into similar-sized pieces.

    3. 3

Thread the cubed halloumi, bell peppers, red onion, and 1 cup of cherry tomatoes alternately onto 8-10 pre-soaked wooden skewers.

    4. 4

Lightly brush the skewered ingredients with 2 tablespoons of olive oil, then generously coat each skewer with the prepared smoky chipotle-harissa glaze.

    5. 5

Preheat a grill to medium-high heat, then place the glazed skewers on the grill grates and cook for 10-15 minutes, turning every 3-4 minutes, until the halloumi is golden-brown and the vegetables are tender-crisp.

    6. 6

Remove the grilled skewers from the heat and let them rest for 2 minutes before serving as a vibrant and flavorful main course.
