    Instructions

    1. 1

In a medium bowl, combine the 2 minced chipotle peppers, 2 tablespoons adobo sauce, 4 minced garlic cloves, 3 tablespoons white vinegar, 0.25 cup orange juice, 1 teaspoon ground cumin, 1 teaspoon dried Mexican oregano, 1 teaspoon salt, and 0.5 teaspoon black pepper to create the adobo marinade.

    2. 2

Add the 1 pound boneless, skinless chicken breast cubes and 12 ounces seitan cubes to the marinade, ensuring all pieces are well coated, then cover and refrigerate for at least 30 minutes, or preferably 2 hours for best flavor.

    3. 3

Thread the marinated chicken, seitan, 1 large red onion (cut into 1-inch pieces), and 2 large bell peppers (cut into 1-inch pieces) alternately onto 8-12 skewers.

    4. 4

Preheat your grill to medium-high heat, then brush the grill grates with 2 tablespoons olive oil to prevent sticking.

    5. 5

Place the skewers on the hot grill and cook for 10-15 minutes, turning every few minutes, until the chicken is cooked through and the seitan and vegetables have nice char marks.

    6. 6

While the skewers are grilling, prepare the avocado crema by mashing 2 ripe avocados with 0.5 cup sour cream and the juice of 1 lime, then stir in 0.25 cup chopped fresh cilantro.

    7. 7

Serve the grilled Seitan & Chicken Adobo Skewers immediately with the prepared avocado crema and extra lime halves.
