      In a large bowl, combine 1 cup all-purpose flour, 2 tablespoons cornstarch, 1 teaspoon baking powder, and 1/2 teaspoon salt, then gradually whisk in 1/2 cup cold water until a smooth batter forms.

      Add 500 grams julienned sweet potatoes to the batter and gently toss to ensure all sweet potato strips are evenly coated.

      Heat 4 cups vegetable oil in a large deep pot or Dutch oven to 350°F (175°C).

      Carefully drop small batches of the sweet potato mixture into the hot oil using a tablespoon, frying for 3-4 minutes per side until golden brown and crispy, then remove and drain on a wire rack.
