    Instructions

    1. 1

Combine 2 tablespoons of gochujang, 4 cloves of minced garlic, the juice of 1 whole lemon (about 4 tablespoons), 3 tablespoons of olive oil, 1 tablespoon of sumac, 1 teaspoon of ground cumin, 1 teaspoon of smoked paprika, 1 teaspoon of salt, and 0.5 teaspoon of black pepper in a large bowl to create the marinade.

    2. 2

Add 2.5 pounds of chicken pieces (thighs and drumsticks) to the prepared marinade, ensuring each piece is thoroughly coated, then cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.

    3. 3

Preheat your oven to 200 degrees Celsius (400 degrees Fahrenheit) while the chicken is marinating.

    4. 4

Arrange the marinated chicken pieces in a single layer on a large baking sheet lined with parchment paper, pouring any remaining marinade directly over the chicken.

    5. 5

Roast the chicken in the preheated oven for 45-50 minutes, or until the internal temperature of the chicken reaches 75 degrees Celsius (165 degrees Fahrenheit) and the skin is beautifully browned and crispy.

    6. 6

Remove the chicken from the oven and allow it to rest for 5 minutes before garnishing with 2 tablespoons of fresh chopped parsley and serving immediately.
