Matcha-Glazed Salmon with Sesame Udon Noodles

Whisk together 2 teaspoons of matcha powder, 3 tablespoons of soy sauce, 2 tablespoons of mirin, 1 tablespoon of honey, and 1 tablespoon of rice vinegar in a small bowl to create the glaze.

Pat dry 2 salmon fillets, each weighing 6 ounces, and brush them generously with half of the prepared matcha glaze.

Preheat your oven to 400°F (200°C) and bake the salmon for 12-15 minutes, or until cooked through, brushing with the remaining glaze halfway through cooking.

Cook 8 ounces of udon noodles according to package directions, then drain and toss them with 1 tablespoon of sesame oil and 1 tablespoon of soy sauce.

While the salmon bakes, thinly slice 2 heads of bok choy and 1 medium red bell pepper.
