    Instructions

    1. 1

Peel and thinly slice 2 large ripe plantains into rounds and place them in a large bowl.

    2. 2

Add 1 small finely minced yellow onion, 2 minced garlic cloves, 0.25 cup chopped fresh parsley, and 0.25 cup chopped fresh mint to the bowl with the plantains.

    3. 3

Season the mixture with 1 teaspoon ground cumin, 0.5 teaspoon ground coriander, 0.5 teaspoon sweet paprika, 1 teaspoon salt, and 0.5 teaspoon black pepper.

    4. 4

Sprinkle 0.5 cup all-purpose flour over the plantain mixture and gently toss everything together until the plantains are evenly coated.

    5. 5

Heat 3 cups of vegetable oil in a large deep pan or pot over medium-high heat until it reaches approximately 350°F (175°C).

    6. 6

Carefully drop small batches of the plantain mixture, about 1 tablespoon each, into the hot oil and flash-fry for 2-3 minutes per side until golden brown and crispy.

    7. 7

Remove the flash-fried plantain fritters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

    8. 8

Serve the Mfaraket Mauz Ma'akli immediately as an appetizer, optionally with a side of spicy tahini yogurt dip.
