    Instructions

      In a small bowl, whisk together 2 tablespoons of white miso paste, 1 tablespoon of mirin, 1 tablespoon of sake, 1 tablespoon of soy sauce, and 1 teaspoon of brown sugar until smooth.

      Place 2 (6-ounce) salmon fillets in a shallow dish, pour half of the miso glaze over them, and let them marinate for 15 minutes at room temperature.

      Preheat your oven to 400°F (200°C); bake the marinated salmon fillets for 12-15 minutes, or until cooked through and flaky, basting with the remaining glaze halfway through.

      Meanwhile, cook 8 ounces of dried udon noodles according to package directions; drain them well and rinse under cold water to prevent sticking.

      In a large bowl, toss the cooked udon noodles with 1 tablespoon of sesame oil, ensuring all noodles are lightly coated.

      Slice 2 green onions and toast 1 teaspoon of sesame seeds in a dry pan over medium heat for 2-3 minutes until fragrant.
