    Instructions

      In a small bowl, whisk together 2 tablespoons of white miso paste, 1 tablespoon of mirin, 1 tablespoon of soy sauce, 1 tablespoon of sake, and 1 teaspoon of brown sugar to create the glaze.

      Place 2 salmon fillets, each weighing 6 ounces, on a baking sheet lined with parchment paper, then brush generously with half of the prepared miso glaze.

      Bake the salmon in a preheated oven at 400°F (200°C) for 12-15 minutes, or until cooked through and flaky, brushing with the remaining glaze halfway through cooking.

      Meanwhile, cook 4 ounces of soba noodles according to package directions, then drain them under cold water and set aside.

      Julienne 1/2 of an English cucumber, 1 medium carrot, and 1/2 of a red bell pepper, then thinly slice 2 scallions into a large mixing bowl with the cooled soba noodles.

      In a separate small bowl, whisk together 2 tablespoons of rice vinegar, 1 tablespoon of sesame oil, and 1 teaspoon of grated fresh ginger to form the dressing.

      Pour the dressing over the soba noodle mixture and toss gently to combine all ingredients thoroughly.

      Serve the miso-glazed salmon immediately over the soba noodle salad, garnishing with 1 teaspoon of sesame seeds.
