    Instructions

      Prepare the miso glaze by whisking together 0.25 cup white miso paste, 2 tablespoons mirin, 1 tablespoon sake, 1 tablespoon soy sauce, 1 tablespoon brown sugar, 1 teaspoon grated ginger, 1 minced garlic clove, and 1 teaspoon sesame oil in a small bowl.

      Place four 6-ounce salmon fillets in a shallow dish and pour half of the prepared miso glaze over them, ensuring each fillet is coated, then marinate the salmon in the refrigerator for 20 minutes.

      Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

      Heat 1 tablespoon of vegetable oil in a large non-stick pan over medium-high heat, then sear the marinated salmon fillets, skin-side down, for 3 minutes until the skin is crispy.

      Transfer the seared salmon fillets to the prepared baking sheet and bake for 8-12 minutes, or until cooked through to your desired doneness, brushing with the remaining miso glaze halfway through baking.

      While the salmon bakes, cook 8 ounces of soba noodles according to package instructions, then drain and rinse them with cold water to prevent sticking.

      Arrange the cooked soba noodles on serving plates and top with the baked miso glazed salmon fillets.

      Garnish each serving with 2 tablespoons of sliced green onions and 1 teaspoon of toasted sesame seeds before serving immediately.
