      Slice 2 ripe plantains into 1-inch thick rounds and slice 1 can of heart of palm.

      Heat 0.25 cup of dendĂȘ oil in a large pot or Dutch oven over medium heat, then sautĂ© 1 large chopped onion, 3 minced garlic cloves, 1 chopped red bell pepper, and 1 chopped yellow bell pepper for 8 minutes until softened.

      Add 1 can of crushed tomatoes, 1 can of full-fat coconut milk, 0.5 cup of vegetable broth, and 1 star anise pod to the pot, bringing the mixture to a gentle simmer.

      Carefully add the sliced 2 ripe plantains and 1 can of heart of palm to the simmering liquid, ensuring they are mostly submerged.
