    Instructions

      In a large pot or deep skillet, heat 2 tablespoons of dendê oil over medium heat.

      Add 1 large thinly sliced yellow onion and cook until softened, about 5 minutes, then stir in 4 minced garlic cloves and cook for 1 minute until fragrant.

      Layer 1 sliced red bell pepper and 1 sliced yellow bell pepper over the onions and garlic, followed by 2 chopped large ripe tomatoes, and cook for 5 minutes without stirring.

      Gently add 2 cans of drained and sliced hearts of palm and 0.5 cup of chopped fresh cilantro to the pot.

      Pour in 1 can of full-fat coconut milk and the juice of 1 lime, then season with 1 teaspoon of salt and 0.5 teaspoon of freshly ground black pepper.

      Bring the stew to a gentle simmer, reduce heat to low, cover, and cook for 20 minutes, allowing the flavors to meld.

      Taste and adjust seasoning as needed, then garnish with additional fresh cilantro before serving.
