Layer 1 sliced red bell pepper and 1 sliced yellow bell pepper over the onions and garlic, followed by 2 chopped large ripe tomatoes, and cook for 5 minutes without stirring.

Gently add 2 cans of drained and sliced hearts of palm and 0.5 cup of chopped fresh cilantro to the pot.

Pour in 1 can of full-fat coconut milk and the juice of 1 lime, then season with 1 teaspoon of salt and 0.5 teaspoon of freshly ground black pepper.

Bring the stew to a gentle simmer, reduce heat to low, cover, and cook for 20 minutes, allowing the flavors to meld.
