    Instructions

      In a large pot or deep skillet, heat 1 tablespoon of dendê oil over medium heat.

      Add 1 large red onion, thinly sliced, 1 large red bell pepper, thinly sliced, and 1 large yellow bell pepper, thinly sliced, cooking for 8 minutes until softened.

      Stir in 3 minced cloves of garlic and 2 diced ripe tomatoes, cooking for another 5 minutes until the tomatoes begin to break down.

      Add 800 grams of sliced hearts of palm and 400 ml of full-fat coconut milk, bringing the mixture to a gentle simmer.

      Season the stew with 1 teaspoon of salt and 1/2 teaspoon of black pepper, and allow it to simmer for 15 minutes, stirring occasionally.

      Drizzle the remaining 1 tablespoon of dendê oil over the stew, then stir in 1/4 cup of fresh chopped cilantro and the juice of 1 lime just before serving.
