      Drain 800 grams of hearts of palm and slice them into 1-inch rounds, then set them aside.

      In a large pot or deep skillet, heat 1 tablespoon of dendê oil over medium heat, then add 1 large finely chopped onion and sauté for 5 minutes until softened.

      Add 4 minced cloves of garlic to the pot and cook for 1 minute until fragrant.

      Stir in 1 sliced red bell pepper, 1 sliced yellow bell pepper, and 2 roughly chopped large tomatoes, cooking for 8-10 minutes until the vegetables begin to soften.

      Pour in 400 ml of full-fat coconut milk, add the sliced 800 grams of hearts of palm, 1 teaspoon of salt, and 1/2 teaspoon of black pepper, then bring the mixture to a gentle simmer and cook for 15 minutes, allowing the flavors to meld.

      Remove the pot from the heat, stir in the remaining 1 tablespoon of dendê oil, 1/2 cup of fresh chopped cilantro, and the juice of 1 lime just before serving.
