    Instructions

    1. 1

In a large bowl, combine 680 grams of cubed lamb shoulder, 1 tablespoon of ground sumac, 1 tablespoon of ground cumin, 1 tablespoon of sweet paprika, 1 teaspoon of ground coriander, 1 finely grated medium onion, 4 minced garlic cloves, 0.25 cup of chopped fresh parsley, 2 tablespoons of olive oil, 1 teaspoon of salt, and 0.5 teaspoon of black pepper, mixing thoroughly to marinate the lamb for at least 30 minutes.

    2. 2

In a separate large bowl, whisk together 2.5 cups of all-purpose flour, 0.5 teaspoon of salt, and 1 teaspoon of granulated sugar.

    3. 3

In a small bowl, dissolve 1 teaspoon of active dry yeast in 1 cup of warm water and let it sit for 5 minutes until foamy, then pour the yeast mixture into the flour mixture along with 1 tablespoon of olive oil and 1 tablespoon of harissa paste, kneading for 8-10 minutes until a smooth, elastic dough forms.

    4. 4

Cover the approximately 500-gram dough mixture with one clean kitchen towel and allow it to rise in a warm place for 60-90 minutes, or until doubled in size.

    5. 5

Once the dough has risen, punch it down gently and divide it into 4 equal pieces, then roll each piece into an oval or round flatbread about 0.25 inch thick, brushing each with a thin layer of 0.25 tablespoon of olive oil and sprinkling with 0.25 tablespoon of ground sumac before stretching them.

    6. 6

Preheat your oven to its highest setting (around 500-550 at least 30 minutes, then carefully transfer the 4 prepared flatbreads to the hot stone and bake for 4-6 minutes per side, or until puffed and lightly charred.

    7. 7

While the flatbreads are baking, thread the marinated 680 grams of lamb onto metal skewers and grill or pan-fry them over medium-high heat for 3-4 minutes per side, or until cooked to your desired doneness and beautifully browned.

    8. 8

Serve the hot Moroccan Sumac-Spiced Lamb Brochettes, amounting to 4 skewers, immediately with the four warm, oven-fired sumac flatbreads for a delightful meal.
