      Drain and rinse 20 ounces of canned young green jackfruit thoroughly, then pat the jackfruit dry and slice it into 0.5-inch thick "steaks".

      In a large bowl, combine 0.5 cup of soy sauce, 0.33 cup of white vinegar, 6 minced cloves of garlic, 2 bay leaves, and 1 teaspoon of whole black peppercorns, then marinate the jackfruit "steaks" in this mixture for at least 15 minutes.

      Heat 2 tablespoons of vegetable oil in a large non-stick pan over medium-high heat until shimmering.

      Carefully place the marinated jackfruit "steaks" into the hot pan in a single layer without overcrowding and sear for 3-4 minutes per side until beautifully browned and slightly crispy.

      Remove the seared jackfruit from the pan and set aside, then add 1 thinly sliced medium red onion to the same pan and sauté for 3 minutes until softened.

      Return the seared jackfruit "steaks" to the pan, add 1 teaspoon of brown sugar if desired, and let it simmer for 5-7 minutes, turning occasionally, allowing the sauce to thicken slightly and coat the jackfruit.
