    Instructions

    1. 1

Generously season 2 kilograms of beef short ribs with 0.5 teaspoon of salt and 0.25 teaspoon of freshly ground black pepper on all sides. Heat 2 tablespoons of rapeseed oil in a large Dutch oven or heavy-bottomed pot over medium-high heat, then sear the short ribs for 3-4 minutes per side until deeply browned, working in batches if necessary, and remove them to a plate.

    2. 2

Reduce the heat to medium, add 1 diced large onion and 4 minced garlic cloves to the same pot, and sauté for 5-7 minutes until the onion is softened and translucent.

    3. 3

Deglaze the pot with 0.5 cup of dry red wine, scraping up any browned bits from the bottom, then return the short ribs to the pot along with 2 cups of beef broth, 3 sprigs of fresh thyme, and 1 bay leaf.

    4. 4

Bring the liquid to a gentle simmer, cover the pot, then reduce the heat to low and braise for 1.5 to 2 hours, or until the short ribs are fork-tender.

    5. 5

While the short ribs braise, prepare the root vegetable mash by boiling 700 grams of peeled and quartered potatoes and 300 grams of peeled and chopped parsnips in salted water for 15-20 minutes until very tender. Drain the vegetables, then return them to the pot and mash them thoroughly with 2 tablespoons of unsalted butter and 0.5 cup of warm milk until smooth, seasoning with 0.25 teaspoon of salt and 0.125 teaspoon of black pepper, and stir in 2 tablespoons of chopped fresh dill.

    6. 6

Once the short ribs are tender, carefully remove them from the pot and set aside, then skim any excess fat from the braising liquid and stir in 0.5 cup of lingonberry jam, simmering for 5-7 minutes until the sauce slightly thickens to a glaze consistency.

    7. 7

Return the short ribs to the pot, coat them thoroughly in the lingonberry glaze, and allow them to heat through for 2-3 minutes.

    8. 8

Serve the Pan-Seared Nordic Short Ribs immediately alongside the warm Root Vegetable Mash, drizzling extra lingonberry glaze over the top as desired.
