    Instructions

    1. 1

Season 24 ounces of white fish fillets with 1 teaspoon of sea salt and 1/2 teaspoon of freshly ground black pepper on both sides.

    2. 2

In a small bowl, combine 2 tablespoons of aji amarillo paste, 1 tablespoon of fresh lime juice, 2 minced garlic cloves, and 1 teaspoon of ground cardamom.

    3. 3

Lightly brush the bottom of a steamer basket with 1 tablespoon of olive oil, then arrange 1/2 thinly sliced red onion and 1 medium sweet potato, sliced into 1/2-inch rounds, in the basket.

    4. 4

Place the seasoned fish fillets on top of the sweet potato and red onion, then spread the aji amarillo-cardamom mixture evenly over each fish fillet.

    5. 5

Pour 1/2 cup of fish broth into the bottom of a large pot or steamer, then carefully place the steamer basket inside, ensuring the broth does not touch the fish.

    6. 6

Cover the pot tightly and steam the fish for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork, and the sweet potato is tender.

    7. 7

Carefully remove the steamed fish and sweet potato to serving plates and garnish with 1/4 cup of fresh chopped cilantro before serving.
