    Instructions

    1. 1

Peel 2 slightly ripe plantains and slice them into 1/2-inch thick rounds.

    2. 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

    3. 3

Add the plantain rounds to the hot skillet and sear for 3-4 minutes per side, or until golden brown and slightly caramelized, then remove and set aside.

    4. 4

In the same skillet, add 1 more tablespoon of olive oil and sauté 3 minced garlic cloves for 30 seconds until fragrant.

    5. 5

Stir in 1 cup of halved cherry tomatoes and cook for 3-4 minutes until they begin to soften.

    6. 6

Remove the skillet from heat and gently fold in 1/4 cup of torn fresh basil leaves, season the tomato mixture with salt and black pepper to taste.

    7. 7

Arrange the seared plantain rounds on a serving platter and generously top each piece with the warm tomato and basil mixture.

    8. 8

Garnish the dish with 2 ounces of shaved Ricotta Salata just before serving.
