    Instructions

    1. 1

In a medium pot, bring 4 cups of chicken broth to a gentle simmer over medium heat.

    2. 2

Carefully add 2 boneless, skinless chicken breasts, totaling approximately 400 grams, into the simmering broth, then reduce heat to low, cover, and poach for 12 to 15 minutes until cooked through.

    3. 3

While the chicken poaches, mince 4 black garlic cloves and grate 20 grams of fresh ginger, then combine them in a small bowl with 3 tablespoons of light soy sauce, 1 tablespoon of rice vinegar, and 1 teaspoon of sesame oil to create the dressing.

    4. 4

Remove the cooked chicken breasts from the broth and let them rest on a cutting board for 5 minutes before thinly slicing each breast across the grain.

    5. 5

Arrange the sliced chicken on a serving platter and generously drizzle the black garlic and ginger dressing over the top of the chicken.

    6. 6

Finely chop 2 stalks of scallions and sprinkle them over the dressed chicken before serving.

    7. 7

Optionally, quickly blanch 2 heads of bok choy in the remaining hot chicken broth for 1 to 2 minutes until tender-crisp, then arrange them around the chicken before serving.
