    Instructions

    1. 1

Clean 1 kilogram of fresh octopus thoroughly, removing the beak and eyes.

    2. 2

In a shallow dish, completely cover the 1 kilogram of clean octopus with 500 grams of coarse sea salt, ensuring all surfaces are coated, then refrigerate for 24 hours to cure.

    3. 3

After 24 hours, rinse the 1 kilogram of cured octopus under cold running water for 10 minutes to remove all excess salt.

    4. 4

Place the 1 kilogram of rinsed octopus in a large pot and cover with fresh water, then bring to a boil and simmer gently for 45-60 minutes until tender.

    5. 5

Once tender, drain the 1 kilogram of cooked octopus and let it cool completely, then slice it into bite-sized pieces.

    6. 6

In a large bowl, combine 2 cloves of minced garlic, 1 small fresh red chili finely sliced, the zest and juice of 1 whole lemon, and 4 tablespoons of extra virgin olive oil.

    7. 7

Add 1/2 cup of fresh mint leaves, roughly chopped, and 1 cup of halved cherry tomatoes to the bowl.

    8. 8

Gently toss the sliced 1 kilogram of octopus pieces with the prepared dressing and cherry tomatoes, ensuring all ingredients are well combined, then let it marinate at room temperature for 15 minutes before serving.
