      Prepare the Mojo marinade by crushing 8 cloves of garlic, combining them with 0.25 cup of olive oil, the juice of 2 oranges, the juice of 2 limes, 2 tablespoons of white vinegar, 2 teaspoons of cumin, 1 teaspoon of oregano, 1.5 teaspoons of salt, and 0.5 teaspoon of black pepper in a bowl.

      Place a 1.5 pound pork loin in a large dish or resealable bag and pour the prepared Mojo marinade over it, ensuring the pork is thoroughly coated, then marinate in the refrigerator for at least 4 hours or overnight.

      Preheat your oven to 400°F (200°C), then peel 3 medium green plantains and slice them into 1-inch thick rounds, and slice 1 medium red onion into thick wedges.

      Remove the marinated pork loin from the refrigerator and place it in a large roasting pan along with the sliced 3 medium plantains and 1 medium red onion wedges, pouring any remaining marinade over the vegetables.

      Roast the pork and vegetables for 30 minutes, then reduce the oven temperature to 350°F (175°C) and continue roasting for an additional 40-50 minutes, or until the pork reaches an internal temperature of 145°F (63°C) and the plantains are tender and slightly caramelized.
