Instructions
- 1
Preheat your oven to 190 degrees Celsius and gently wash 8 fresh ripe figs, then quarter them lengthwise and arrange them cut-side up in a single layer on a baking sheet.
- 2
In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of sumac, and 1 pinch of sea salt, then drizzle this mixture evenly over the quartered figs.
- 3
Roast the figs in the preheated oven for 15-20 minutes, or until they are slightly softened and caramelized at the edges, being careful not to overcook them.
- 4
While the figs are roasting, prepare the syrup by gently warming 1/4 cup of honey, 1 tablespoon of orange blossom water, and 1 tablespoon of fresh lemon juice in a small saucepan over low heat until well combined.
- 5
In a dry skillet, lightly toast 1/4 cup of roughly chopped shelled pistachios over medium-low heat for 3-5 minutes until fragrant, being careful not to burn them.
- 6
Carefully remove the roasted figs from the oven, arrange them on a serving platter, and immediately drizzle the warm honey-orange blossom syrup over the top.
- 7
Finally, sprinkle the toasted 1/4 cup of pistachios generously over the warm, syruped figs before serving.
