Instructions
- 1
In a medium bowl, combine 1 pound of thinly sliced pork tenderloin with 1 tablespoon of kroeung paste and 1/2 tablespoon of fish sauce, marinating for 15 minutes.
- 2
Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat until shimmering, then add 4 cloves of minced garlic and 1 thinly sliced medium shallot, stir-frying for 1 minute until fragrant.
- 3
Add the marinated pork to the wok and stir-fry for 3-4 minutes until it is lightly browned, breaking up any clumps with your spatula.
- 4
Stir in the remaining 1 tablespoon of kroeung paste, 2 tablespoons of gochujang, 1/2 cup of chicken broth, 1 tablespoon of palm sugar, and the remaining 1/2 tablespoon of fish sauce, mixing well to combine.
- 5
Introduce 1 thinly sliced red bell pepper and 1 cup of trimmed and halved green beans to the wok, continuing to stir-fry for 5-7 minutes until the vegetables are crisp-tender.
- 6
Remove the stir-fry from the heat and gently fold in 1/4 cup of fresh basil leaves until they just begin to wilt.
- 7
Serve the Sach Chrouk Kroeung Chien Gochujang immediately with freshly cooked jasmine rice.
