    Instructions

    1. 1

Pat dry 500 grams of beef sirloin strips with paper towels and set aside.

    2. 2

Heat 1/4 cup of niter kibbeh in a large wok or skillet over high heat until shimmering.

    3. 3

Add the beef strips to the hot wok and sear for 3-4 minutes until browned on all sides, then remove the beef and set aside.

    4. 4

Reduce heat to medium, add the remaining 1/4 cup of niter kibbeh to the wok, then add 1 large thinly sliced red onion and sauté for 5 minutes until softened.

    5. 5

Stir in 2 cloves of minced garlic, 1 inch of grated fresh ginger, and 2 tablespoons of berbere spice blend, cooking for 1 minute until fragrant.

    6. 6

Return the seared beef to the wok along with 1/2 green bell pepper strips, 1/2 red bell pepper strips, and 1 fresh thinly sliced jalapeño, tossing well to combine for 2-3 minutes.

    7. 7

Pour in the 1/4 teaspoon saffron threads steeped in 2 tablespoons warm water and 1/2 teaspoon salt, stirring everything together for another 1-2 minutes until heated through and well coated.

    8. 8

Garnish with 1/4 cup of fresh chopped cilantro before serving.
