    Instructions

      Pat 600 grams of white fish fillets completely dry with paper towels to ensure a crispy flash fry.

      In a shallow dish, combine 1/2 cup all-purpose flour, 1 teaspoon ground cumin, 1/2 teaspoon turmeric powder, 1/4 teaspoon black pepper, and 1/2 teaspoon salt.

      Lightly dredge each fish fillet in the seasoned flour mixture, shaking off any excess before cooking.

      Heat 3 tablespoons of olive oil in a large non-stick skillet over medium-high heat until shimmering. Flash-fry the fish fillets for 3-4 minutes per side, or until golden brown and cooked through.

      While the fish fries, prepare the dressing by combining 2 tablespoons of finely minced preserved lemon, 1 teaspoon of minced garlic, 1/4 cup of chopped fresh cilantro, 2 tablespoons of chopped fresh dill, 3 tablespoons of extra virgin olive oil, and 1 tablespoon of fresh lemon juice in a small bowl.
