    Instructions

    1. 1

Preheat your oven to 200°C (400°F) and drain 800 grams of canned young green jackfruit, rinsing it thoroughly under cold water, then roughly shredding the jackfruit pieces using your hands or two forks to resemble pulled meat.

    2. 2

In a large mixing bowl, combine 2 sliced large onions, 2 sliced medium bell peppers, 3 sliced medium tomatoes, and 2 sliced medium potatoes.

    3. 3

In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons fresh lemon juice, 4 minced cloves garlic, 2 teaspoons ground cumin, 1.5 teaspoons ground coriander, 1 teaspoon smoked paprika, 0.5 teaspoon ground turmeric, 0.5 teaspoon black pepper, and 1 teaspoon salt to create the aromatic marinade.

    4. 4

Pour the prepared marinade over the shredded jackfruit and mixed vegetables in the large mixing bowl, ensuring all ingredients are evenly coated.

    5. 5

Spread the marinated jackfruit and vegetable mixture in a single layer into a large roasting pan or oven-safe dish, ensuring the vegetables and jackfruit are not overcrowded to promote even roasting.

    6. 6

Roast in the preheated oven for 40-50 minutes, or until the vegetables are tender and slightly caramelized and the jackfruit has lightly browned edges, stirring gently halfway through the cooking time.

    7. 7

Garnish the roasted Saniya Gannat with 1/4 cup fresh chopped parsley before serving immediately with rice or warm pita bread.
