    Instructions

    1. 1

In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat and sear 500 grams of seitan pieces until golden brown on all sides, then remove the seitan and set it aside.

    2. 2

Add 1 large chopped red onion, 1 medium chopped green bell pepper, and 4 minced garlic cloves to the same pot and sauté for 5 minutes until softened.

    3. 3

Stir in 2 medium diced Roma tomatoes, 1 tablespoon of ají amarillo paste, 1 teaspoon of achiote powder, and 1 teaspoon of ground cumin, cooking for another 3 minutes to develop the flavors.

    4. 4

Return the seitan to the pot and pour in 1 cup of lager beer and 1 cup of vegetable broth, stirring to combine all ingredients.

    5. 5

Season the stew with 1 teaspoon of salt and 1/2 teaspoon of black pepper, bring it to a gentle boil, then reduce the heat to low, cover, and simmer for 30 minutes.

    6. 6

Uncover the pot, stir in 1/4 cup of fresh chopped cilantro, and continue to simmer for an additional 15 minutes, allowing the sauce to thicken slightly.
