    Instructions

      Prepare the seitan by cutting 500 grams of seitan block into 1 cm thick slices or cubes.

      In a food processor, blend 3 stalks of thinly sliced lemongrass, a 2 cm piece of sliced galangal, 3 deseeded fresh red chilies, 3 large chopped shallots, 4 peeled garlic cloves, 1 teaspoon turmeric powder, and 1 teaspoon coriander powder into a smooth paste.

      In a large bowl, combine the seitan pieces with the prepared spice paste, 100 ml of coconut milk, 2 tablespoons of soy sauce, 1 tablespoon of lime juice, 1 tablespoon of grated palm sugar, and 1 tablespoon of vegetable oil, ensuring all seitan pieces are thoroughly coated.

      Cover the bowl and marinate the seitan in the refrigerator for at least 2 hours, or preferably overnight, for maximum flavor absorption.

      Preheat your grill to medium-high heat and lightly brush the grill grates with the remaining 1 tablespoon of vegetable oil to prevent sticking.

      Place the marinated seitan pieces on the hot grill and cook for 3-4 minutes per side, or until slightly charred and heated through, basting occasionally with any leftover marinade.

      Remove the grilled seitan from the grill and serve immediately as a main dish or with steamed rice and a fresh cucumber salad.
