    Instructions

    1. 1

Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat.

    2. 2

Add 500 grams of seitan strips to the hot oil and stir-fry for 5-7 minutes until browned and slightly crispy, then remove from the pan and set aside.

    3. 3

Add the remaining 1 tablespoon of vegetable oil to the same pan, then add 2 large thinly sliced onions and stir-fry for 3-5 minutes until softened and translucent.

    4. 4

Stir in 4 minced garlic cloves and 1 small minced green chili pepper (if using) and cook for 1 minute until fragrant.

    5. 5

Add 100 grams of pitted and halved green plums (or 2 tablespoons of sour plum sauce) and 100 ml of dry white wine to the pan, scraping up any browned bits from the bottom, and bring to a simmer.

    6. 6

Return the seitan to the pan, add 1 teaspoon of salt and 1/2 teaspoon of black pepper, and cook for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.

    7. 7

Stir in 1/2 cup of fresh chopped tarragon and 1/4 cup of fresh chopped cilantro, cooking for 1 more minute until just wilted.
