Instructions
- 1
Prepare the duck by patting it dry with paper towels, then rub the duck thoroughly with 2 tablespoons of salt, 1 tablespoon of black pepper, and 1 teaspoon of garlic powder, inside and out.
- 2
Preheat your smoker to 225°F (107°C) with 2 cups of chosen wood chips, and place the seasoned duck in the smoker, breast-side up, smoking for 3-4 hours or until an internal temperature of 165°F (74°C) is reached in the thickest part of the thigh.
- 3
While the duck smokes, combine 2 cups of tucupi, 0.5 cup of passion fruit pulp, 2 finely chopped malagueta peppers, 2 tablespoons of honey, and 1 tablespoon of lime juice in a medium saucepan.
- 4
Bring the tucupi and passion fruit mixture to a simmer over medium heat, then reduce the heat to low and cook for 15-20 minutes, stirring occasionally, until the sauce thickens slightly.
- 5
Once the smoked duck is cooked, carefully remove it from the smoker and let it rest on a cutting board for 15 minutes to allow the juices to redistribute.
- 6
Carve the duck into portions, then arrange the carved duck on serving plates, drizzling each portion with 1.5 tablespoons of the prepared tucupi and passion fruit reduction.
- 7
Garnish the Smoked Amazonian Duck with 0.25 cup of fresh chopped cilantro before serving immediately.
