    Instructions

      Heat 2 tablespoons of olive oil in a large wok over medium-high heat until shimmering.

      Add 1.5 pounds of cubed pork tenderloin to the hot wok and sear for 4-5 minutes, browning on all sides.

      Stir in 2 medium peeled and 1/2-inch diced sweet potatoes and 1 small diced red onion, cooking for 6-8 minutes until slightly softened.

      Introduce 1 large 1/2-inch diced red bell pepper and 3 minced garlic cloves, cooking for another 3 minutes until fragrant.

      Sprinkle in 1 teaspoon of smoked paprika, 0.5 teaspoon of ground cardamom, 1 teaspoon of salt, and 0.5 teaspoon of black pepper, tossing thoroughly to coat all ingredients.

      Pour 1 tablespoon of apple cider vinegar and 1 tablespoon of maple syrup into the wok, stirring continuously for 1-2 minutes until the sauce slightly reduces and glazes the hash.
