    Instructions

    1. 1

Heat 2 tablespoons of rapeseed oil in a large skillet or wok over medium-high heat.

    2. 2

Add 1 large yellow onion, thinly sliced, to the hot oil and sauté for 5 minutes until softened.

    3. 3

Incorporate 16 ounces of seitan strips and 8 ounces of sliced cremini mushrooms into the skillet and cook for 7-8 minutes, stirring occasionally, until the seitan is browned and the mushrooms are tender.

    4. 4

Stir in 1 teaspoon of smoked paprika and 0.5 teaspoon of caraway seeds, cooking for 1 minute until fragrant.

    5. 5

Add 1 medium Granny Smith apple, thinly sliced, 14 ounces of drained sauerkraut, 0.25 cup of vegetable broth, and 1 tablespoon of whole grain mustard to the mixture, then bring to a simmer.

    6. 6

Reduce the heat to medium-low, cover, and cook for 8-10 minutes, allowing the flavors to meld and the apple to soften slightly.

    7. 7

Remove from heat, stir in 2 tablespoons of chopped fresh dill, and season with salt and freshly ground black pepper to taste.
