    Instructions

      Press 16 ounces of extra-firm tofu for 30 minutes to remove excess water, then cut it into 1-inch cubes and prepare a marinade by whisking together 2 tablespoons of olive oil, 2 tablespoons of fresh lemon juice, 2 minced garlic cloves, 1 teaspoon of dried oregano, 1 teaspoon of dried thyme, 0.5 teaspoon of smoked paprika, 0.25 teaspoon of black pepper, and 0.5 teaspoon of salt.

      Place the tofu cubes in the marinade and let them sit for at least 20 minutes, or up to several hours in the refrigerator.

      Meanwhile, chop 1 red bell pepper and 1 green bell pepper into 1-inch pieces, slice 1 zucchini into 0.5-inch thick half-moons, and cut 0.5 red onion into wedges suitable for threading.

      Thread the marinated tofu cubes and prepared vegetables alternately onto metal or pre-soaked wooden skewers.

      Prepare your smoker or grill for indirect heat, reaching a temperature of 250-275°F (120-135°C), and add wood chips of your choice, then smoke the skewers for 25-30 minutes, or until the vegetables are tender-crisp and the tofu is infused with smoke flavor.

      While the skewers are smoking, cook 1 cup of bulgur according to package directions, typically by simmering it in 2 cups of vegetable broth or water until tender.

      Once cooked, fluff the bulgur with a fork and stir in 0.25 cup of chopped fresh parsley, 0.25 cup of chopped fresh mint, 1 additional tablespoon of olive oil, and 1 additional tablespoon of fresh lemon juice, adjusting seasoning with salt and pepper to taste.
