    Instructions

      Press 400 grams of extra-firm tofu for 30 minutes to remove excess water, then cut into 8 equal slices about 1-inch thick.

      In a small bowl, combine 3 tablespoons of white miso paste, 2 tablespoons of mirin, 1 tablespoon of sake, 1 tablespoon of soy sauce, 1 teaspoon of granulated sugar, and 1 teaspoon of toasted sesame oil, mixing until smooth to create the glaze.

      Line a large pot or wok with aluminum foil, then scatter 1/4 cup of uncooked white rice, 1/4 cup of granulated sugar, and 2 tablespoons of loose-leaf green tea evenly on the foil to prepare the smoking mixture.

      Place a wire rack over the smoking mixture, ensuring it does not touch the ingredients, then arrange the pressed tofu slices on the rack in a single layer.

      Cover the pot or wok tightly with a lid or another layer of foil, heat over medium-high heat until smoke appears, then reduce heat to medium-low and smoke the tofu for 15-20 minutes.

      Preheat a broiler to high or heat a non-stick pan over medium heat, then brush each smoked tofu slice generously with the prepared miso glaze.

      Broil the glazed tofu for 2-3 minutes, watching carefully to prevent burning, or pan-sear each side for 1-2 minutes until caramelized.
