In a small bowl, combine 3 tablespoons of white miso paste, 2 tablespoons of mirin, 1 tablespoon of sake, 1 tablespoon of soy sauce, 1 teaspoon of granulated sugar, and 1 teaspoon of toasted sesame oil, mixing until smooth to create the glaze.

Line a large pot or wok with aluminum foil, then scatter 1/4 cup of uncooked white rice, 1/4 cup of granulated sugar, and 2 tablespoons of loose-leaf green tea evenly on the foil to prepare the smoking mixture.

Place a wire rack over the smoking mixture, ensuring it does not touch the ingredients, then arrange the pressed tofu slices on the rack in a single layer.
