    Instructions

    1. 1

Pat dry 1 pound of pork loin with paper towels and set aside.

    2. 2

In a small bowl, combine 1.5 teaspoons of smoked paprika, 3 minced garlic cloves, 0.5 teaspoon of cumin, 0.5 teaspoon of dried oregano, 0.75 teaspoon of salt, and 0.25 teaspoon of black pepper to create a rub.

    3. 3

Rub the mixture generously all over the pork loin and let it marinate at room temperature for 20 minutes, or refrigerate for at least 1 hour.

    4. 4

For the glaze, combine the zest and juice of 2 oranges, 3 whole star anise pods, 2 tablespoons of red wine vinegar, and 2 tablespoons of honey in a small saucepan and simmer over medium heat until reduced by half, approximately 10-15 minutes.

    5. 5

Preheat your oven to 450°F (230°C) to mimic a very hot baking environment, and heat 2 tablespoons of olive oil in an oven-safe skillet over high heat.

    6. 6

Sear the pork loin for 2-3 minutes on all sides until golden brown, then transfer the skillet to the preheated oven.

    7. 7

Roast for 15-20 minutes, or until the internal temperature reaches 145°F (63°C), brushing with the star anise-orange glaze every 5 minutes during the last 10 minutes of cooking.

    8. 8

Remove the pork loin from the oven, tent it loosely with foil, and let it rest for 10 minutes before slicing and serving with any remaining glaze.
